Here’s a quick and easy meal that’s so good and so good for you! I love that it’s super fast and easy to make. Definitely going to try it! Thanks, Todd.

 Cut up zucchini, squash, artichoke hearts, olives, grape size tomatoes and anything else you have in the fridge (sometimes to include asparagus); drizzle it in olive oil, add salt and pepper and “Greek seasoning.” Add shrimp (raw) or chicken (browned) and bake for 25 minutes at 375. Stir one midway.
Add feta cheese afterwards. Be careful not to overlook the veggies.
