
Thanks to Lisa Gay for sharing her best friend’s solution for a bumper crop of summer squash. It’s fast, healthy and easy. I love a single skillet meal.
Ingredients:
1 lb ground beef
Yellow Squash
onion
garlic
16 oz salsa
Zataran’s Creole Seasoning
Rice
Salt & Pepper
Brown ground beef with salt, pepper and onion. Add garlic, then drain the grease.
Add salsa and creole seasoning.
Slice yellow squash and lay on top of the beef mixture.
Simmer on low until the squash is cooked.
Serve over rice.
